Most yoghurt makers need between 6 and 12 hours to turn milk and starter culture into set yoghurt, depending on the temperature setting and how tangy you want the flavour. Lower temperatures and milder yoghurt usually mean a longer incubation time, while higher temperatures and stronger flavour can be ready sooner. Many machines include a timer or adjustable programme, so you can start the batch in the evening and wake up to fresh yoghurt in the morning, then chill it for a few hours before serving.
